A Beginner's Guide to South Indian Tiffin: Idli, Dosa, Vada

What is it like to eat something that doesn’t leave you feeling stuffed, can be eaten at almost any hour of the day, and somehow manages to fill you up just right? That’s pretty much the magic of the South Indian tiffin. Or, as anyone who has grown up eating idli, dosa and vada would tell you, just a perfectly normal breakfast.

South India has far more to offer than the three dishes that seem to have become its unofficial ambassadors. The five southern states have their own food traditions, ingredients and breakfast favourites. But the various types of South Indian breakfast do have a few delicious things in common: hot food, fermented batters, lentils, rice, chutneys, sambar and, very often, a cup of filter coffee to finish the job.

So, if you’re new to it, consider this your South Indian tiffin guide.

First, what is tiffin food?

If “tiffin” makes you think of a lunch box, you’re not completely wrong. But in South India, this is slightly different.

Tiffin traditionally refers to lighter meals or snacks, particularly breakfast and evening quick bites. Over time, it became an integral part of food culture across South India, with each region putting its own spin on what lands on the plate.

That means there isn't one fixed list of tiffin dishes. Idli, dosa, vada, pongal, upma, pesarattu, uttapam and several regional favourites can all find their place at the table.

In other words, tiffin isn't one dish. It's a whole way of eating.

The big three: Idli, Dosa and Vada

If you’re wondering where to begin, start here.

Idli: soft, steamed and comforting

Idli is made from a fermented batter of rice and urad dal, then steamed until soft and fluffy. It is usually served with sambar and chutney, making it a simple, satisfying introduction to South Indian breakfast. And despite its humble appearance, a good idli is something of an art. Soft enough to yield to your spoon, sturdy enough to hold its own against a generous dunk in sambar.

Dosa: crisp, golden and endlessly versatile

Dosa is made from a fermented rice and urad dal batter, spread thin over a hot tawa and cooked until golden and crisp. Then comes the fun part: Plain dosa, masala dosa, ghee dosa, pesarattu, rava dosa and uttapam are just some of the ways you can explore it. If idli is comfort food, dosa is simply addictive. We bet you will not stop at one.

Vada: the circle of joy

Medu vada is made from urad dal, shaped into its familiar ring and fried until crisp on the outside while remaining soft inside, often called the ‘Indian doughnut’, but we argue the doughnut is a version of our iconic Vada. Period. Pair it with sambar, dunk it in chutney or enjoy it alongside idli. There really isn't a wrong way to approach a vada.

How do you actually order tiffin?

There are no complicated rules. Start with something familiar, then branch out.

If you're new to South Indian breakfast, an idli-vada combination or masala dosa is an easy starting point. Once you've found your favourites, try a pesarattu, benne dosa or one of the regional specials.

And don't be shy with the chutney. That's what it's there for.
